I bought a Chinese cookbook recently (Every Grain of Rice: Simple Chinese Home Cooking by Fuchisa Dunlop). The first recipe I tried out was "Tofu with Black-Bean-Sauce": Heat up a wok, add oil and into the sizzling hot oil you put dried chillis, Szechuan pepper and a special black bean paste. Once its fragrant, add ginger, garlic and the vegetables shortly after. Stir fry and then add sugar and soy sauce to taste and add the tofu. Finish with some spring onion greens.
Probably the tastiest fully vegan dish I've ever cooked!
