Hooray! I've never killed paarrhurnax either - I really don't get why Bethesda didn't make that an option in the vanilla game
Lore reasons: The Blades hated the dragons because of their war crimes from a war that already ended a very long time ago thought to be extinct or retreated, long even before the first games, but even more so for their existence. Since the Dragonborn is out to kill Alduin in the modern era that is out to consume Nirn (The 4th Era as they termed it), siding with the Blades means YOU have to kill Paarthunax and be accosted by the Greybeards. Going back up there after that or staying around a bit, they will one-shot fus ru dah + fo krah diin combo you off their monastery. The Greybeards are a merciful, pacifist kind with only a couple of members left, not wishing violence (e.g. the Civil War) but admits a lot about the world ending since all the other members don't speak. You will hear a conversation with both sides' leaders as a prelude to the dilemma. There is a video about it in the vanilla version that explains it fully.

Assuming you are not partaking in the Civil War and seeking neutrality (that's what the Aldmeri Dominion wants to keep it prolonged so they can recover and fight again), you can hold a peace council with both sides (one or the other leader will try to propogate you into their side) to give Skyrim a chance at peace. By doing this for the Greybeards, the Blades will not be hostile to you due to being a Dragonborn, just that they cannot proceed any more missions/favors for the time being. You can still meditate with Paarthunax and do other favors for the Greybeards, but that is just it. Winning neutrality will make citizens, guards and jarls alike having their own opinions and feelings of such a bizarre option you made, and you no longer get to see Civil War related random encounters for the remainder of your playthrough.
Bottom line:
Siding with the Blades = You can get up to 3 "irreplacable" followers of your choice specifically to fight dragons fit with Blades' gear, but can be used in other battles, they'll all be there when you reach the target destination. You won't lose any marriage status for a spouse-type follower (if you have one). You get cool rewards for your light or heavy armor character when going out against any remaining dragons you yet fought, and acquiring their own set of blessings. However, as the video explains, drinking the potion meant to give you a permanent perk by Esbern is "glitched", meaning you get nothing out of the potion and a total waste.
Siding with the Greybeards = You can assuming you're not a bloodthirsty protagonist hold a peace council (if the war is ongoing and you yet to take either side's oath and is optional), meditate with the dragon to get blessings based on one of three specific shouts, and do favors for them at the monastery.
